70 g glutinous rice flour

65 ml water

60 g sugar

2 tsp cinnamon powder

Mix 70 g of your glutinous rice flour with 65ml of water, ensuring there are no lumps.

Add 60 g of sugar. Once combined, the mixture should be runny; add more water if needed.

Cover your bowl with clingfilm and put it in the microwave, on high, for 3 minutes.

Mix it to thicken it up, then put it in the microwave for a further 1 to 2 minutes. Afterwards, it should be a soft, mochi-type texture.

Next, the mixture needs to be steamed for 15 minutes.

Roll out your dough, and sprinkle your cinnamon on top before kneading the dough.

Roll it out again and cut the mixture into small strips. Bake them for 15 minutes to have the perfect, crispy snack to go with your green tea.
